I'm getting fancy, right?






Secret ingredient: GRAPEFRUIT 

My sister and I picked up some frozen flanks of Salmon at Trader Joes last week. Salmon has to be my favorite fish. It's so easy to cook and tastes delicious almost effortlessly. 

For the marinade, I mixed ponzu sauce, grapefruit juice, a little soy sauce, lime juice, and some mexican chili powder. 

I let the fish sit in the marinade for about 15 minutes, while I blanched the green beans and put some Jasmine rice in the rice cooker. I set the marinated fish in tin foil and sprinkled some red onions over the fish. 

This is a great quick dinner. Not to mention, it works great for left overs. 

I think next time I'll stir fry the green beans in the ponzu grapefruit sauce.
