Chocolate Walnut Golden Raisin Cookies










Saeyoung went to orange county and left me in los angeles. boo. But as long as she was going, I thought I'd send her with some cookies to take home to our family.  

Golden raisins and chocolate?  Yes, a definitive yes.  Actually, I wanted to make this recipe with dried sour cherries but I couldn't find them.  The golden raisins were a happy substitution.  The cookies are chewy and delicious and crackle adorably on the top .

Ingredients:
1 cup all purpose flour (you can also use bread flour for a chewier cookie)
3 eggs
1/4 teaspoon baking powder
1/4 teaspoon kosher salt
1 teaspoon vanilla extract
8 0z of semi-sweet chocolate
1 cup golden raisins or sour cherries
1 cup chopped walnuts
1 cup chocolate chips
3 tablespoons butter
1 cup sugar


1. in a double broiler melt the butter with the chocolate and smooth over with a rubber spatula
2. combine eggs and sugar 
3. add the chocolate to the egg and sugar mixture and combine well
4. add the vanilla extract to the chocolate mixture
5. in a separate bowl sift together the flour, baking powder, and salt
6. fold half the flour mixture into the chocolate mixture
7. with the remaining flour mixture, add the raisins, walnuts and chocolate chips and coat well
8. add the raisin/walnut/chocolate mixture into the batter
9. either refrigerate the cookie dough for 1-3 hours or stick in the freezer for about thirty minutes
10. while the cookie dough is cooling, preheat the oven to 325
11. scoop equal amounts of dough onto a parchment lined cookie sheet, about 1 inch apart
12. bake for about 15-20 minutes or until the top becomes glossy and crackled slightly
13. let cool on sheet for about five minutes.  it's important to not handle the cookies at this point because the crust is very delicate
