In celebration of the "blended" union of my mom (korean) and her husband (mexican/irish), I made them a dinner representative of their marriage! I read about a taco truck in LA that sell Korean BBQ tacos. Sounds simple enough. In place of carne asada, I used Korean short ribs and added cilantro, raw onions, grilled onions, avocado and a little lime. Because the meal was in great need of a starch, I also made a stir fry of seafood and udon noodles. The last time I ate at Les Figues headquarters, Vanessa made pasta with sliced almonds and so I stole her idea and added almonds to the stir fry--I think they greatly improved the dish.
